Chicken Salad with Drunken Caramelized Walnuts

3-6 cups cooked chicken (a good use for leftovers}




¼ cup rice wine vinegar


2 tbs. fig jam


½ cup – 1 cup light mayo


¼ tea dill (fresh if possible)


Pepper to taste


Salt to taste


1 clove chopped garlic


Chopped red or yellow peppers {these tend to be sweeter}


Up to ¼ cup onions


Hot sauce of your choosing if you like heat


Chop up the chicken




Chop up onions, pepper, dill and walnuts


In a large bowl add all the ingredients together, mix


Serve with warm bread and enjoy!


Drunken Walnuts


Any nut will do! Choose your favorite

In a hot skillet add nuts, granulated sugar –a couple teaspoons full

When you hear the hot sizzle it is time to add the Triple Sec, you can use any alcohol of your choosing

Stir with a wooden spoon at a high heat for a few moments

On a baking sheet sprinkle some sugar (this prevents the nuts from sticking badly}

Place nuts on cookie sheet and pop into a 350 degree oven for five minutes

Remove from oven and let the nuts crisp up on the pan

When the walnuts are cool you can store them in an airtight container, use for cakes, cookies etc.
