Sugar Cookie Extravaganza !

Today we made a mountain of sugar cookies, a fun project and a gift of food which our friends love.
Here is the recipe, enjoy and have a happy holiday season.  

Ingredients

  • 1 1/2 cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon Mexican vanilla
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Directions

    1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
    2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
    3. Bake 6 to 8 minutes in preheated oven. Cool completely.

The Dutch Baby Pancake

Fall is on the way and it is a busy time. Slow down and enjoy a little cooking. Here is a super nice weekend treat, the Dutch Baby pancake, a thin puffy delight which can be served with syrup, jam or my favorite powdered sugar and lemon.
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup sifted all-purpose flour
  • 1 pinch ground nutmeg
  • 1 pinch salt
  • 2 tablespoons butter
  • 2 tablespoons confectioners' sugar for dusting

Directions

  1. Place a 10 inch cast iron skillet inside oven and preheat oven to 475 degrees F (245 degrees C).
  2. In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, nutmeg and salt.
  3. Remove skillet from oven and reduce oven heat to 425 degrees F (220 degrees C). Melt butter in hot skillet so that inside of skillet is completely coated with butter. Pour all the batter in the skillet and return skillet to oven.
  4. Bake until puffed and lightly browned, about 12 minutes.

Frigoverre Glass Storage Bowls With Lids

I just want to rave about the Frigoverre glass storage and prep bowls. I have donated all my plastic storage containers and switched to these nesting glass bowls. Food retains its taste and flavor much better when it is stored in glass. These bowls are very simple and attractive, nice enough to use as serving dishes at the table, just remove the lid and you’re good to go. I find it very convenient to look into the fridge and actually see the food I am looking for instead of taking the lid off and peering into last weeks  lasagna which was left in the refrigerator because we it couldn’t be seen in the back . Thanksgiving Tip #3

Nothing is more elegant for desert than a soufflé and Thanksgiving is the perfect time to make a light and airy confection, a fresh pumpkin soufflé. I have individual ramekins by Mason Cash which are oven to table. They are a lovely creamy color and will offset but not upstage your beautiful desert. Here is a very good recipe by Todd English. It includes all the wonderful scents of fall; cinnamon, ginger, nutmeg clove and of course, pumpkin.

Thanksgiving Tip #2

I think that Thanksgiving should be over the top. Lots of well prepared fresh dishes that are full of flavor. For an even more decadent start to your holiday dinner, may I suggest a charcuterie platter? A few tasty morsels of well cured meats, olives good cheese and some nice crusty bread. To serve these delicacies I have just the thing! The large wooden bread board from Costa Rica made from recycled wood. Thanksgiving Tip #1

Making gravy for your Thanksgiving meal can be one of the most tricky and delicate components. The gravy can suffer many types of disasters, too watery , lumpy , too thick , tasteless or just plain inedible. Not only will you never want to attempt gravy making again, but your guests will think twice about coming over for dinner. I suggest making the gravy ahead of time. This will enable you to taste and amend any mishaps that occur and leave you time to prepare all the other components of your feast as well as leave you time to relax and enjoy your holiday dinner. l have just the thing for holding your gravy - the Frigoverre glass measuring cup with lid. It holds 1 liter (4.23 cups) of liquid and the measuring cup is also microwavable. Here is a link to a good gravy recipe that can be made ahead of time.
